Sao Jorge is a truly rare cheese from the volcanic island of Sao Jorge in Portugal's Azores archipelago. One of the few cow's milk cheeses to come out of Portugal, it is somewhat cheddar-like in flavor. Let the cheese come to room temperature before serving.
