Excellent when served as part of brunch or dessert, these creations add a whole new dimension to the world of cheese. Capra Honeyed Goat is creamy and rich, but firm enough to slice. Sweetened by honey, spread it on a bagel or toast. VOD Cheese Currant, imported from Sweden, combines 2 of Sweden's most successful tastes: Absolut Vodka Kurant and aged Praestost. The combination of the slightly sharp cheese and the berry-sweet vodka is charming and addictive. White Stilton with Mango and Ginger blends the right amount of mango and ginger with White Stilton so that the cheese is not overly sweet. It almost tastes like cheesecake without the crust. Capra Honey Goat is an 11-oz. log. White Stilton and VOD Cheese are 8-oz. wedges. Let the cheese come to room temperature before serving.
